   An endless screw sends the grapes through stainless steel pipes to the de-stemmer that separates the grapes from their stems.
 
The grapes, still practically intact, then descend to the crusher.
From there, the grapes arrive in the pumping hopper from which they will be directed to the appropriate fermentation tank.
On the way, the grapes are protected from oxidation via an addition of sulfur (SO2), product used for the same purpose by the Romans.
Another endless screw carries the stems outside the winery while, depending on the choice of the technician at the control panel, the grapes are sent via a series of tubes toward their fermentation in the winery's tanks.

This procedure concerns red wines - white wines involve a different process.
